Base wine preparation: The grapes are pressed directly after picking . The musts are cold - settled . This is followed by alcoholic fermentation and then filtration of the base wines. The foaming : We add to the base wine a "liqueur de tirage " made of sugar and yeast, which carries out the second fermentation. It is this process that releases the fine bubbles and effervescence, bottle by bottle, in the traditional method. The bottles spend 9 months aging on racks, taking their time to refine their profiles and develop complex aromas. The bottles are then riddled before being disgorged and served in your cellars.
